Quick and Easy Vegan Recipes To Try in Your Condo

Veganism is popularly gaining a large following with a massive amount of people opting to follow this philosophy or way of life. A CNN article states that a Manila-based vegan group began with only 70 members, but in May 2019 had grown to 31,000. It now has around 34,000 members who are either vegans or vegan-curious.

Veganism has come a long way from its conception back in 1944, when a few members of the Leicester Vegetarian Society in England broke away from the group to form the Vegan Society. The term “vegan” was coined by putting the first two letters and last two letters of the word “vegetarian” together. In an attempt to distinguish themselves from vegetarians, vegans do not consume dairy, eggs, or any other products from animals — on top of abstinence from meat — just like vegetarians.

Veganism is currently defined as the practice of abstaining from the use of animal products, particularly in diet, and an associated philosophy that rejects the commodity status of animals.

This lifestyle is beneficial in many ways with reasons of ethics, health, and ecology as the biggest reasons.

While holed up at one’s condo during lockdown, this gives one the opportunity to try new things. Cooking and diet is one thing to spice up and change. Perhaps going vegan could be that change? Be it the reasons mentioned above, being a part of a rising community, or simply trying something new, anyone could be curious to go vegan.

If you want vegan living to go along with your condo living, here are some vegan recipes to try at your condo.

Tomato, Lemongrass, and Rice Soup

This hearty tomato soup is perfect for the rainy season, especially if you live in a condo in Baguio.

Chopped tomatoes infused with spices like cumin and red chili, and herbs like coriander and lemongrass made this dish bursting with different flavors. In addition to this, it is very easy to cook, it serves two people, and can be finished in a total of 30 minutes. This can be the perfect appetizer since it only contains 187 calories.

With a condo in Baguio mentioned, imagine being in Vista Pinehill surrounded by the pine trees and mountains — the best scenery along with the cool climate accompanying it. Enjoying this warm, scrumptious, and of course vegan dish becomes easy to indulge in with all this in mind.

Gazpacho Sauce Spaghetti

Love pasta but want to go vegan? Check this vegan pasta recipe out! Just make sure that the pasta is completely vegan. Vegan marts sell vegan pasta or you can always make your own fresh vegan pasta made with eggless pasta dough.

This pasta uses Gazpacho as its sauce. In case you do not know, Gazpacho is a cold soup made of raw and blended vegetables; hand-in-hand with veganism. It originates from the Iberian Peninsula.

Cherry tomato, green pepper, garlic, and onion are the vegetables used for the Gazpacho. Add in some basil and Tabasco hot sauce to finalize this amazing vegan pasta.

This dish fits in well in this fast-paced lifestyle where everyone is busy, on the move, and in a hurry. This dish is very easy to cook and can be cooked in 15 minutes. Yes, you read that correctly. So if you live at Laureati di Trevi Towers, a Vista condo in Makati, or a condo in Pasig — a city with a vibrant business center — and you are in a rush to eat because you need to be at the office, this dish has you covered since you will be consuming 361 calories with only 15 minutes to prepare it.

Mexican Salad Tortilla Bowls

It does not have to be Taco Tuesday nor does one have to be a meat lover to enjoy tacos. Even if you are a vegan, you can binge on some tacos any time you like!

These tacos come in the form of tortilla bowls, and those bowls are filled with vibrant colors and oozing flavors. It is both appealing to the eye and satisfying to the appetite. To give an idea, these bowls contain colors and flavors like red onions, avocados, tomatoes, red peppers, Little Gem lettuces, black beans, and chilis.

A 312-calorie dish for 4 made in 20 minutes is the perfect college snack. So if for example, you live in a condo in Taft like Vista Taft for La Salle, or a condo in Katipunan for Ateneo, bring your schoolmates over for a study session accompanied by some tacos as snacks.

Spicy Chickpeas Skillet

What makes this dish standout from the first three is that this dish is high in protein. So absolutely, it is possible for vegan dishes to be high in protein despite the absence of meat or products from meat.

This dish produces a lot of flavor due to the number of herbs like coriander and mint, and spices like cumin, turmeric, and chili powder. Combine these with different vegetables, different garnishes, and of course the chickpeas in one skillet and in 15 minutes you have yourself a high protein dish. So simple yet definitely restaurant quality.

As a home cook, it is good advice to include an array of herbs and spices to the condo design of your kitchen.
